Ingredients

  • 1 pound firm cod (or haddock) fillets
  • 1/2 cup oil
  • 1/4 cup lemon juice
  • 1 garlic clove
  • 1 tablespoon minced onion
  • 3 tablespoons chopped parsley
  • 1 tablespoon grated lemon rind
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup flour
  • Salt and pepper to taste
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/2 cup sour cream

Instructions

  1. Marinate fish fillets for several hours at room temperature in mixture of oil, lemon juice, garlic, onion, parsley, lemon rind, rosemary, salt, and pepper.
  2. Dredge fish in flour mixed with salt and pepper, Parmesan cheese, and paprika.
  3. Fry fish in hot oil until brown, then lay in baking pan and spread with sour cream. Bake at 350 degrees F until fish is done.
